Peaches!

If I blog our peach canning project, then I can go back next year and see how things were laid out because it sure did work well yesterday. 
We started with three half bushels (1 1/2 bushels total).

In the laundry room, just inside the house, we put towels on the washer and dryer.  This is where we put sugar and Fruit Fresh into clean jars, put in a little hot water, stirred that up and sent the jars outside to be filled. 


Outside, Bryce had the blanching pan going on our Coleman Double Burner.  He blanched the peaches and brought them to Lisa and Sara who were working at a table in the garage.

 Next they came back inside to be washed off and get their lids.  I had a pan of lids (flats) in the kitchen sterilizing.


Bryce was a good sport to do most of the cooking.  I didn't get a picture when it was just the blanching pan because it didn't take long to get seven quarts done and the first pot processing. 






















Pretty soon it was two pots processing after all the blanching was done.  The garden hose brought around from the side of the house worked well for filling the canner and rinsing out pans.


 A second table was set up in the garage for the jars waiting to be processed and those all finished and cooling.
 Eric arrived and helped with the canning until he was needed for kid duty.
 Anna kept herself busy downstairs and Katie had a nap, but when all the peaches were in jars there was plenty of time to sit and rest and visit . . . .

And eat a bowl of peaches with cream.  Yum!


In the end we had 49 beautiful quarts ready to share and enjoy all winter.

What a great idea to do it mostly outside! That keeps a lot of the cooking heat and mess out of the house.
